Ingredients
- 1 tomato seeded, diced
- 1 cup diced bell peppers
- 2 links (3 oz. each) precooked chicken sausage, diced (example: Applegate’s Chicken Apple Sausage)
- 12 eggs, beaten
Method
- Preheat oven to 400 degrees.
- Prepare a 12 cup muffin tin with cooking spray.
- Place about 1 tablespoon each of peppers, diced tomato, and sausage in each muffin cup. *can substitute other meat/veggies.
- Pour eggs over the other ingredients, filling each cup about 2/3 full.
- Bake for 15-18 minutes, until eggs are completely set. The eggs will puff up while baking, and settle once cooled.

I made these yesterday. I didn’t put any meat in them. But, they are Delicious. Breakfast is my struggle, so this was great!!
