Egg Muffins

Ingredients

  • 1 tomato seeded, diced
  • 1 cup diced bell peppers
  • 2 links (3 oz. each) precooked chicken sausage, diced (example: Applegate’s Chicken Apple Sausage)
  • 12 eggs, beaten

Method

  1. Preheat oven to 400 degrees.
  2. Prepare a 12 cup muffin tin with cooking spray.
  3. Place about 1 tablespoon each of peppers, diced tomato, and sausage in each muffin cup. *can substitute other meat/veggies.
  4. Pour eggs over the other ingredients, filling each cup about 2/3 full.
  5. Bake for 15-18 minutes, until eggs are completely set.  The eggs will puff up while baking, and settle once cooled.

  1. I made these yesterday. I didn’t put any meat in them. But, they are Delicious. Breakfast is my struggle, so this was great!!
